26 Nov Baked fillet of Meagre with vegetables
For 2 servings
2 fillets of CORVINA REX FRESCAMAR, approx. 200 g each
150 g baby potatoes (with or without skin)
100 g seasonal vegetables
½ green pepper
½ red pepper
3 garlic cloves
Salt and freshly ground black pepper

Slice the peppers, and garlic cloves.
Line an oven tray with greaseproof paper and arrange the potatoes, seasonal vegetables, peppers, garlic and a sprig of rosemary on top.
Drizzle with olive oil and the juice of half a lemon, season with salt and pepper and bake for 15 minutes at 180ºC.
Add the fillet of Meagre, previously seasoned, drizzle again with oil and the juice of the other half of the lemon and bake for a further 17 minutes.
